Carol G. Jackson, our beloved mother, grandmother, and great-grandmother, departed this life to be with our Heavenly Father on Saturday, August 28, 2021. She was 83 years old.
A memorial service will be held at 9:30 am on Wednesday, September 1, 2021 in Sunset Funeral Home Chapel.
Her life began on February 1, 1938, created by the union between Richard Allen and Elizabeth Mehl. She lived several years in New Jersey and relocated to Alabama and lived here until she was called Home. Mrs. Jackson had several hobbies, including bingo, arts and crafts, coloring, playing scrabble, and listening to music, especially My Girl by the Temptations. Her favorite colors were blue and purple. Mrs. Jackson was also known for her signature spaghetti sauce, a restaurant even offered to buy her recipe. She enjoyed spending time with her family, especially during the holidays and her birthday. In her later years, she developed dementia but still managed to keep a sharp mind and knew how many children, grands, and great grands she had. She was very opinionated, outspoken, and would tell it like it is. Mrs. Jackson was also just as loving and caring not only to her own family but to those around her. She had beautiful blue eyes and a smile that would light up a room. Mrs. Jackson will be truly missed by so many. She had so much wisdom and so many sayings and metaphors that we know will be shared. Her legacy will live on through her family.
Mrs. Jackson was preceded in death by her parents, Richard Allen and Elizabeth Mehl.
She leaves to cherish her memories with her 9 children, Deborah (Ed) Olson, Kevin Woodruff, Michael Woodruff, Susan (John) Binder, David Woodruff, Linda Orefice, Nancy Sheffield, Karen Rhett, and Melissa (Amos) Brown; her beloved 13 grandchildren that grew up with and around her, John, Jr., James, Jeffery, Shannon, Emily, Breana, Brian, Dexter, Desmond, Traci, Kara, Nicole, and Alisha; and her special Blessings, her 9 great-grandchildren with 2 more on the way.
